Sauvignon Blanc is the main grape of the white wines of Bordeaux and is the only grape in some of the Loire Valley's great white wines. Sauvignon Blanc is second to Chardonnay in prominence but is increasing in quality as past productions were criticized as having a grassy, hay-like character and at worst having an aroma likened to cat urine.

Wine makers are currently producing fresh, clean, fruity wines that are medium bodied with medium-flavor intensity. The cooler regions of the world produce ripe, green fruit such as gooseberries or green plums with piercing acidity and the warmer climates such as California or Bordeaux the fruit quality may be more likened to apricots.

Classic growing areas: Bordeaux and Loire in France

New growing areas: Marlborough in New Zealand; Washington State and California in the U.S.; Stellenbosch in South Africa; Maipo Valley in Chile; Toscana in Italy
