Pinot Noir are red grape varieties that produce classic black cherry, raspberry, current and spice flavors with wilted roses, earth, herb and cola aromas. Pinot Noir is finicky and can vary greatly due to heat and cold spells, particularly in Burgundy where it tends to bud early making it susceptible to frost. The grape is best when it ripens slowly which is a challenge also in Burgundy where cold and rain may negatively effect it. Pinot Noir is difficult to work with after picking and varies considerably while still in the cask; bottles may vary even within the same vintage.

Burgundy is where Pinot Noir premiers as the classic red variety grape. Pinot Noir is made into white wine in Champagne where it is pressed immediately after picking. California and Oregon are also making world-class Pinot Noirs.

Classic growing areas: Burgundy, Champagne, France.

New growing areas: California, Oregon.
