Madeira gets its name from the island of Portugal. The best Madeira comes from the original island where it has been produced for centuries, however, other countries also produce this fortified wine. Madeira is unique from almost all other wines in the heating process called estufagem, giving it a unique character. This wine has four styles that are named after the grape variety it is produced from. The order listed is from increasing order of sweetness and depth of color: Sercial, Verdelho, Bual and Malvasia, or Malmsey. The last 100 years have seen Madeira produced from the inferior Tinta Negra Mole grape but recently the more traditional grape varieties are being used.

Madeira is excellent and widely-used as a cooking wine, however, at its best it is a big wine that is rich, fascinating and is long-lived; some of them striking their peak after a century of aging.
