Denominação
de Origem Controlada: Abbreviated to DOC, the designation
of geographic origin and quality of Portuguese wines as laid out by
Portuguese wine law. The system was instituted in 1986.

Estufagem:
A process used in making madeira wherein the wine is artificially
aged by being heated. Beginning in the 17th century, madeira was shipped
as far as India and the Americas and it was found that such long,
hot sea voyages actually improved the wine. As a result, winemakers
began sending shiploads of casks on round trips across the tropics
to induce the effect. This practice was continued until the beginning
of the 20th century when it was deemed too expensive. The alternative
was to heat the wine in ovens or hothouses called estufas.

de Proveniencia Regulamentada: A second level quality
designation, behind Denominação de Origem Controlada,
for Portuguese wines it equates roughly to the French VDQS.
Lagar:
The traditional open, low-sided rectangular stone vessel in which
grapes are crushed by barefoot treading. Associated with port and
madeira, this practice has been in decline for many years because
of rising labor and the availability of modern vinification alternatives.
Quinta:
A farm or estate. Roughly equivalent to château
and domaine, particularly in connection with port.

a good vintage. In Spain the term also denotes longer ageing, while
in Portugal it means that the wine has a higher than normal alcohol
content.
