Cactus Juice: Rocks glass with ice. 1 oz Tequila,
1/2 oz Amaretto, and sweet and sour. Pour ingredients in order and
fill with sweet and sour. Amaretto will sink to the bottom to make
an attractive drink. Do not garnish with a cherry; it will ruin the
flavor.
Cafe
Ginger: Highball glass with ice. 1 oz. coffee liqueur
and 4 oz. ginger ale. Garnish with a cherry.
Cafe Romano: Cocktail glass. 1 oz. Sambuca,
1 oz. Kahlua or coffee liqueur and 1 oz. half & half or cream.
Shake with ice and strain. Garnish by dropping 2 or 3 coffee beans
in glass.
Caffe Fizz: Collins glass. 1 oz. coffee liqueur, 1
oz. vanilla rum and ginger ale,. Pour liquors into glass and fill
with ginger ale. Garnish with an orange wedge.
Caipirinha (k-EYE-pir-een-Ya): Rocks glass.
In the glass, muddle one lime cut into eighths and 2 teaspoons of
sugar until all the sugar is dissolved. Fill the glass with crused
ice, add cachaca and stir gently (cachaca is a Brazilian style of
rum).
Cajun: Chilled martini
glass coated with Tabasco. 3 ounces vodka or gin and ½ of a
Jalapeno. Combine liquor and jalapeno in shaker with ice, shake and
strain. *Coat martini glass with Tabasco sauce by shaking Tabasco
into glass, swirl sauce around and pour out any remaining liquid.
Calvados Cocktial: Chilled cocktail glass. 2 oz. calvados,
1/2 ounce triple sec, 1/2 oz. fresh orange juice, 1/2 oz. fresh lemon
juice and 1 or 2 dashes of orange bitters. Shake with ice and strain.
Calypso Cool-Aid: Collins glass with ice. 1 1/4 oz.
white rum, 1 oz. pineapple juice, 1/2 oz. lemon or lime juice, 1/2
tsp. sugar and soda. Pour ingredients in glass and fill with soda.
Candy Cane: Cocktail glass. 1/2 oz. Cinnamon
Schnapps and 1/2 oz. Peppermint Schnapps. Stir with ice and strain.
Cape Cod: Highball glass with ice. 1 1/2 oz.
vodka and 3 oz. cranberry juice. Pour over ice and serve with a lime
wedge.
Cappucino Cocktail: Cocktail glass. 2/4 oz.
coffee-flavored brandy, 3/4 oz vodka and 3/4 oz. light cream. Shake
with ice and strain.
